Turkey and Sharp Cheddar on Cinnamon Swirl Bread with Pickled Apples

Tart apples soaked in a sweet and salty brine become an irresistibly tasty, and incredibly flavorful crunchy sandwich addition. Combined with sharp cheddar cheese, peppery arugula and honey dijon sauce and served on sweet cinnamon swirl bread this sandwich is sweet and salty, crunchy and creamy, delicious and healthy to boot. What more could you want?

Turkey and Sharp Cheddar on Cinnamon Swirl Bread with Pickled Apples

2 sandwiches

  • 1 granny smith apple
  • 1 cup water
  • 1 cup white wine vinegar
  • 1/2 cup sugar
  • 4 teaspoons salt
  • 1 teaspoon whole peppercorns
  • 1 teaspoon whole coriander
  • 2 tablespoon mayonnaise
  • 1 tablespoon yellow mustard
  • 1/2 tablespoon dijon mustard
  • 1 tablespoon honey
  • 1/2 teaspoon lemon juice
  • 4 slices cinnamon bread
  • 1/2oz arugula (1 large handful)
  • 4 slices extra sharp cheddar cheese
  • 1/4lb sliced turkey (I used Boars Head Salsalito Turkey)

Pickle Apples:

Combine water, vinegar, sugar, salt, peppercorns and coriander in a 2 cup plastic container or mason jar and stir until sugar dissolves. Core apple and cut into thin (1/8 inch) thick slices and add to pickling liquid. Refrigerate for at least 30 minutes and up to 2 weeks. 

Make Honey Dijon: 

Combine mayo, mustards, honey and lemon juice in a small bowl and mix to combine Season to taste with salt and refrigerate until needed (up to 2 weeks).

Assemble Sandwich:

Toast bread if desired. Spread a thin layer of honey dijon on each piece of bread. Build sandwich by layering cheese, turkey, pickled apples and arugula between cinnamon bread. Enjoy!
