While these small seeds might seem questionable to some, many health experts agree: if you only could eat one cup of food per day, it should be a cup of chia seeds. But why?
Chia seeds are the pinnacle of superfoods, providing a long list of health benefits including high and sustained energy, fiber, easily digesteable protein for muscle health and regeneration of tissues. In addition chia seeds help with:
- blood sugar regulation
- hydration and electrolyte balance
- joint pain relief
- … and much more!
While the Cooked Chicago kitchen chefs have a host of recommendations for ways to get your chia seed fix, for a quick seasonal treat try Sarah’s Pumpkin Pie Chia Pudding. Simply stir together 1/4 cup pumpkin puree, 3/4 cup almond milk, and 3 Tablespoons chia seeds. Add in 1-2 teaspoons maple syrup, a few drops of vanilla extract and a pinch of pumpkin pie spice. Taste and add more maple/vanilla/spice until it’s perfect for you. Refrigerate for 30 minutes until its set and then enjoy topped with some crunchy candied pecans!
